Peaches and cream almond cake

With summer comes warm weather so it's sometimes tricky (or as they say here, débile) to be baking.  But it got just cool enough to bake at 75°outside so here's a quick recipe for fast summer treats.
And since peaches are so delicious right now, let's make some treats with these delicious, juicy fruits.

Batter :

100 g softened butter

150 g sugar

2 eggs

10 cl whipping cream (or yogurt or buttermilk)

120 g flour (or gluten-free flour)

30 g almond flour or hazelnut powder

1 teaspoon baking powder

1 teaspoon vanilla

Pinch of salt

2 tablespoons of Amaretto

3 peaches, peeled and sliced (or fruit of preference : blueberries, raspberries, apples, pears..)
2 tablespoons almond slivers
2 tablespoons confectioners sugar for dusting

Add sliced peaches on slightly baked batter (so they don't sink)Powder the top with confectioners sugar once cake is cool.

Preheat oven to 350 ° F / 180° C.  Line an 11-inch (28 cm) rectangular pan or round cake pan with parchment paper. In a bowl, cream butter and sugar, then add eggs and cream (or yogurt).  Add all other ingredients, mixing well.

Pour the cake batter into pan and bake for 12 minutes or until the batter has risen slightly, then add the fruit and almond slivers evenly over the top.  Bake for another 30-35 minutes or until the middle has risen (test with a toothpick which should come out clean). If the top needs to brown a bit, put on broil setting for about 2 minutes. Watch that it doesn't burn (I kinda know this from uh... burning some). Allow to cool before removing from pan. Sprinkle with powdered sugar once it has cooled, right before serving. Enjoy, everyone !

Ahora en espagnol :

Ingredientes:

100 g de mantequilla ablandada

150 g de azúcar

2 huevos

100 ml de nata para montar, yogur o suero de leche

120 g de harina de trigo (o harina sin gluten)

30 g de harina de almendras o avellanas

1 cucharadita de levadura en polvo

1 cucharadita de extracto de vainilla

Una pizca de sal

2 cucharadas de Amaretto

3 melocotones pelados y en rodajas (o la fruta que prefieras: arándanos, frambuesas, manzanas, peras, etc.)

2 cucharadas de almendras laminadas

2 cucharadas de azúcar glas


Precalienta el horno a 180 °C (350 °F). Forra un molde redondo de 28 cm (11 pulgadas) con papel de hornear. En un bol, bate la mantequilla y el azúcar hasta obtener una crema. Añade los huevos y la nata (o el yogur). Incorpora suavemente el resto de los ingredientes hasta que estén bien integrados.

Vierta la masa en el molde preparado y hornee durante 12 minutos, o hasta que suba ligeramente. Luego, distribuya uniformemente la fruta y las almendras laminadas sobre el pastel. Hornee durante 30 a 35 minutos más, o hasta que al insertar un palillo en el centro, este salga limpio. Si la superficie necesita dorarse, gratínela durante unos 2 minutos. Tenga cuidado de que no se queme (lo sé por experiencia). Deje que se enfríe por completo antes de desmoldar. Espolvoree con azúcar glas una vez frío, antes de servir.
