Key lime pie

I really love baking key lime or lemon meringue pie because... we really love eating them ! That perfect blend of tanginess and sweetness is unbeatable. When I'm in the southwest, there are lemon and lime trees in the garden so I like to gather when ripe and have juices handy.  We freeze the juice and have it available all year round.

Key limes are smaller and have more seeds than regular limes and have a thinner skin, but regular limes will do the job.

Here is the easiest key lime pie recipe I’ve had the pleasure of baking :

Crust
1-1/2 cups crushed graham or cookie crumbs
6 tablespoons of butter
1/3 cup light brown sugar

Filling
28 oz sweetened condensed milk
3/4 cup yogurt or sour cream
3/4 cup lime juice
1/2 cup lime zest (about 3 limes)

Whipped cream
1 cup heavy whipping cream
1/4 cup powdered sugar

Preheat oven to 375 degrees F.  Pulse cookies in a processor or crush with a rolling pin in a plastic bag.  Mix cookies crumbs, sugar and butter in a bowl.  Press mixture into a pie tin until you get an even 1/4 inch layer.  Bake for 5 minutes.  Allow to cool.

In a bowl, whisk the filling ingredients.  Once you get an even color and texture, pour into prepared crust and bake for 8 minutes.  Let pie to cool before refrigerating for at least 3 hours.

Make whipped cream or add meringue cookies on top, ten add grated or sliced limes for decoration.  Enjoy, everyone !

Santa Swiss roll

Hello, everyone! Now that it's the season... Had quite a bit of fun making this yule log.  I was dreaming of a red and white Santa-inspired cake with raspberries. I was so pleased with the result, the cake was so soft and not too sweet, the cream light and the raspberries added that perfect tanginess and sweetness. Pink Black Forest cake

Hi guys ! A bit late but I did say I would post this recipe, which was a fun cake to put together for a birthday.  I layered pink velvet and fudge brownie cakes with vanilla cream and candied cherries to make this Pink Black Forest cake for October Rose (breast cancer awareness month). Believe it or not, I didn't have fresh cherries, since it was late in the season, but here is reason to believe you can use frozen or preserved cherries and it works out well too. To be honest, I did make this cake over the space of 2 days. First I preserved the cherries, then made one cake layer and refrigerated everything.  The next day I made another cake layer, as well as the cream and assembled it.  Start with preparing the cherries.
